Made some delicious scones last week as I was alone at home and bored. Pops loved the scones I made the previous time round and I thought these might make a wonderful welcome gift for her too. Afterall she's coming all the way from M'sia just for my commencement :)
Chocolate Chip Scones |
I adapted the recipe from a book lent by a friend. I halved the recipe as 750g of flour sounded insanely crazy. I also made a few adjustments to the ingredients (see under *note). This recipe yield a much stickier scone batter as compared to the ones we made in BITC, resulting in a cake-ier scone.
Cranberry Scones |
Cranberry Drop Scones (yield 32 scones)
Adapted from Wayne Gisslen's Professional Baking Book
- 185g unsalted Butter
- 150g Sugar
- 8g Salt
- 40g Egg yolks (approx 2 eggs)
- 750g Pastry Flour (All purpose flour would do too)
- 38g Baking Powder
- 435g Milk
- 125g Dried Cranberries/ Chocolate Chip
- Cream together the butter, sugar, salt.
- Gradually cream in the egg yolks, blend in thoroughly.
- Add in the milk into the creamed mixture.
- Gradually sift in the all purpose flour and baking powder.
- Mix until the flour is combined and a sticky dough is formed.
- Add in the dried cranberries or chocolate chip
- Depending on how big you want your scone to be, pinch a handful and place it on a lined baking tray (with silicon paper)
- Bake in 200 degree oven till golden brown, approx 20 minutes if your scones are of average cafe size. (you can egg wash it in you like)
*Note:
- Don't worry if the milk is not mixed well with the creamed mixture
- I decreased the sugar to 130g and I thought the scones tasted marvelous
- I used low fat milk and brown sugar
- Make sure your cranberries and nicely incorporated into the batter as the over exposed cranberries get really dry, bitter and hard after baking.
Verdict: These scones tasted damn good, especially with melted chocolate chips in between. The scones were alot more cakey than the previous ones; who would have known cakey scones tasted so good! Both pops and dad loved these as compared to the previous ones so there you have it, one kick ass cakey scone for you guys to make!
