Breadwinner

We are almost down to our last few assessments and I don't know whether to be happy or sad...We will be having 3 consecutive weeks of assessment on the bread we have learnt and these were what we made last week.

We were asked to make wholemeal bread, both close & open top, and rye bread. I guessed it was our class's nightmare to have Chef Gan as our assessor but honestly I kinda admire him as his the only person who has the ability to tame our class.

As a whole, I guess all our breads turned out fine. Despite having missed the class on wholemeal bread,  I managed to whip up a pretty decent wholemeal bread thanks to our awesome classmates. I guessed the refreshment session before the assessment kinda helped too. 

Oh ya, we got to learn something new today as well! Apparently close top bread yields softer crumbs and an overall better texture. The way to cut & mould the dough was pretty different as well.

I thought my rye bread was pretty soft, this time round. I was really relieved to find my bread looking normal, was kinda afraid the dough wouldn't rise or smth along those lines.

As we were ultra efficient, Chef Gan suggested we make a Wholemeal French Baguette. Although I was pretty tired, I was glad we got to learn something new that day. The steps to making a Wholemeal Baguette is pretty much similar to that of a Baguette, except having to carry out the extra step of soaking the wholemeal in water.

These wholemeal baguette were super duper yummy and were great for dunking into curries! Alternatively, you could chop up some garlic and layer them over butter before toasting #homemade garlic bread ftw.

Rye oh Rye 
I swear these rye breads were much softer than the ones we made the previous time round. Just to share how I ate my rye bread:
1: Toasted, sliced and tossed into yoghurt filled with fruits :)
2: Torn and used as a mop for cleaning up the almost empty peanut butter jar :))
