Last week's baking class marked the end of the whole chocolate extravaganza, we separated into 3 different groups: Chocolate Figurines, Chocolate Box/ Almond Nibs Roche, Chocolate Pralines/ Chocolate Truffles. I immediately volunteered to be the chocolate box team as I thought it was the easiest :P that was not until Chef Ivan added Almond Nibs Roche in... -.- Nonetheless it was still easier than the rest.
We cooked the almond nibs and started making the gelatine mold after that; this was followed by the troublesome tempering of chocolate to fill the box and make the roche. Fill the box, chill. Make the base, chill. Make the cover, chill. Decorate and the box is done! Roche was done in a jiffy too as I had efficient teammates; I think we were the first team to complete.
The pralines/ truffles were completed soon after we were done too. Everything was pretty much done except the chocolate figurines.
The chocolate figurines team faced some issues with their chocolate eggs as it cracked while un-moulding. Poor team had to re-do their eggs while the rest of us gave "eye power" and helped clear up. Anyway we were done by about 4.30 and all of us were relieved that it was the last chocolate lesson! I thought it was really a great way to end our chocolate journey, albeit I admit I was sick and tired of tempering chocolates. Having made everything again, it sort of made us realise how much we have learnt and developed :)
