A Cheesy Twist On A Classic

My mum gets stressed up really easy and she hates buying ingredients with short shelve life as she gets really stressed out about keeping track of the different expiry dates and when to use what by. I used to mock her and I think karma is biting me at my ass right now as I'm fast becoming like her. Example A: I got so upset when i threw away 1 litre worth of expired cream which cost 10+

Lol I think I'm drifting... so anyways I decided to make carrot cake (yes! again!) last week as I'm afraid the cream cheese, lying in the fridge, will suffer the same fate as its cream counterpart. Before you judge and exclaim boring, note that I gave this carrot cake a twist by incorporating a cheesy batter instead of it's usual cream cheese frosting. Verdict: Taste good but could have been better.

Carrot Cheese Cake
I adapted the recipe from http://penniesonaplatter.com/2010/10/29/carrot-cake-cheesecake/ and omitted the pineapple cream cheese frosting. I thought the cheesecake would look good if it was cheesy in the middle and carroty at the sides- worst decision ever! Please do follow the recipe and alternate dollops of cream cheese batter and carrot cake batter as this allows the cake to cook evenly. My carrot cheese cake was still way wobbly in the center while its carroty edges were over cooked. Nonetheless it was delicious! Infact I might just stick with making carrot cheesecake for the rest of my life :) Shall attempt another one soon.. Stay tune :)
