We are into our 3rd chocolate lesson and it only gets better. We made chocolate boxes last week and filled it up with pretty little pralines, now that's the kinda box I like! and Tiffiany & Co. can't hold a candle to these...

Dark, Milk and White Chocolate Boxes

We began the lesson by making gelatine molds for decorating the boxes. These gelatin molds act as an "chop", embossing designs all over the boxes. We used gelatin powder as BITC is halal.

After making the molds, it was time to make the chocolate boxes. Using a cake ring, we wrapped a plastic cake wrapper around the cake ring and pasted the gelatin mold onto the plastic cake wrapper. This allowed the prints to form as we poured chocolate into the cake ring. It sounds kinda messy and complicated but it's totally doable once you tried it/ see Chef Ivan's demo.
A Jewelry box ain't one without some fine touches of gold, hence we dusted our gelatin mold with some gold dust so as to have nicely golden printed leave embossed around the chocolate box.

Not wanting to take pictures of empty boxes, we decided make "jewelries" to fill up our boxes. We made a variety of patterned pralines as we had nice boxes to display them. In case you're wondering, the pralines are actually painted with tinted cocoa butter so its totally edible.

Malcolm and Aqtica's group made squarish white chocolate boxes and they looked just like a treasure box! It was smart of them to dust the box with gold dust, giving it a really rustic yet precious look.

It was a pity we used compound chocolate to make the boxes. Compound chocolate is a cheap, fake tasting chocolate which contains a bit of cocoa vegetable fat and sweeteners. Couveture chocolate, on the other hand, is a high quality chocolate that contains extra cocoa butter which means tampering is needed :(
Loved how Chef Ivan went all out to create a nice backdrop for our chocolate boxes.
